Researching the Roots: Finding a Solution That Respects Tradition

When faced with the challenge of preserving vegetables without chemicals or refrigeration, we dove deep into both science and tradition. We explored modern food technologies but found our answer in an age-old Indian method—solar dehydration. Used for centuries in rural households, solar dehydration uses natural heat to gently dry vegetables while retaining their nutrition, taste, and texture.

At the time, I didn’t have a lab. So I built a DIY prototype in my own living room—transforming a sofa into a basic solar dryer. After months of testing, I was amazed at how efficient and sustainable this method could be. But soon we realized that while solar drying was eco-friendly, Indian consumers were emotionally attached to the look and feel of fresh vegetables.

This insight led us to evolve our product offering. Instead of selling dried veggies directly, we pivoted to offering pre-cut, hygienically processed vegetables with an extended 6-month shelf life—a solution that respected consumer expectations while retaining sustainability.
